Oh my…this may be my best creation yet! Creamy, smooth and filling and the PERFECT comfort food! I’ve recently acquired an Instant Pot so I’ve added the instructions for making this soup in the Instant Pot as well!
Makes 8-10 cups
- 2 tsp of coconut oil
- 1 onion, diced
- 2 large sweet potatoes, diced
- 4 cups of broth (chicken or vegetable)
- 1 cup of red lentils, rinsed
- 1/2 tsp of cumin
- 1 tsp of coriander
- 1/2 tsp of salt
- 2 tsp of fresh ginger, grated
- 1-2 tbsp of red curry paste
- 3/4 cup of coconut milk
Heat coconut and sauté diced onions for 3-5 minutes. Add sweet potatoes, cumin, coriander, salt, ginger, red lentils and broth. Cook for 30 minutes, until sweet potatoes are soft. Puree (add more broth if necessary) and add coconut milk. Mix well and enjoy!
Instant Pot Directions:
Set Instant Pot to saute, add coconut oil and onions. Cook for 3-minutes. Add sweet potatoes, cumin, coriander, salt, ginger, red lentils and broth. Set to manual for 15 minutes. Once pressure has decreased, open and add coconut milk. Mix well and enjoy!
