Spring is finally here and I’m SO ready for fresh foods, hearty salads and yummy dressings. Lime and cilantro are two of my favourite flavours, and I’m pretty sure I’m going to have to make this every week! Next up will be to try it on a grain bowl.
- 3/4 cup of fresh cilantro
- 1/4 cup of olive or avocado oil
- 1/4 cup of apple cider vinegar
- 1-2 cloves of garlic
- 2 Tbsp of honey or maple syrup
- 1/4 tsp of salt
- 1/2 tsp of dijon mustard
- 1/2 avocado
Wash and remove cilantro leaves from the stems. Add all ingredients to a blender, or use an immersion blender to throughly blend to a creamy consistency. Adjust seasoning to taste! Refrigerate for up to 3-5 days. Enjoy!
