Summer is the perfect season for bean salads. These “one bowl” wonders can pack a nutritional punch (high is protein, complex carbs and fiber) but can also make for a quick, convenient and satisfying meal!
Try this salad on its own, or in a wrap for a tasty lunch.
Ingredients: Makes 4 servings
- 1.5 cups of cooked black beans (about 1 small can)
- 1 large handful of fresh cilantro, chopped
- 1 avocado, diced into cubes
- 1 cup of diced tomato
- 1/2 cup of corn niblets
- 1/2 cup of diced cucumber
- 1/2 cup of diced pepper
- 1 lime
- 1 clove of garlic
- 1 tsp of olive oil
dash of salt and pepper, if desired.
Mix all ingredients and let sit for 1 hour before serving. Enjoy!
